Clean-Eating Cucumber & Tomato Salad

I’m a firm believer that side dishes should be kept simple. Well, anything that I make is pretty simple! I like my main dish to be the star of the show, and who wants to make dinner any more complicated? Not this momma of four!
So, when I was contemplating a side for my burger last week, I knew I wanted something simple and fresh. This healthy Tomato Cucumber Salad was a perfect match. The light and bright flavors of fresh tomato and cucumber perfectly contrast the deeper flavors of a burger, steak, chicken...pretty much anything!  As we get closer to summer, I know I'll have fresh cucumbers and tomatoes from my garden to use!
I love showcasing very “basic” recipes like this for the new cooks in my audience. Why are simple recipes like this great? Because they’re SO easy to build on! The salad presented below is bare bones and, while delicious as is, can be taken to the next level with any number of add-ins. Give it a Greek flare with some feta, olives, or even toasted pieces of pita bread to soak up that delicious dressing. If you’re feeling adventurous, try adding some cubed watermelon for a nice sweet-salty contrast. Got fresh herbs? Toss them in there. And of course, you can customize the dressing by using different vinegars or lemon juice, infused oils, or by adding fresh garlic. Learning a basic recipe like this is the first step towards getting creative in the kitchen and adding minor changes to a great recipe to give it a different flare, depending on what mood you're in!

Garlic Mashed Cauliflower

This recipe is so simple and healthy, and with the right kitchen tools, can be literally made in minutes! It's the perfect side dish to nearly any meal, is low-carb and low-calorie, and there are lots of fun variations you can use to change it up so that you don't ever get bored with it!

As a busy mom of 4, I don't spend a ton of time in the kitchen, but that doesn't mean we resort to eating pre-packaged/prepared convenience foods! It just means that over the years, I've gotten smart as to what "gadgets" to have in my kitchen to make food prep a breeze! This Pampered Chef Micro-Cooker for one, is a kitchen essential! Steamed food is not only super yummy, but more nutritious because you're not cooking the nutrients out of your veggies in the water, as with boiling. Plus it's easy to clean, and with the veggie setting on my microwave, it literally takes minutes!

I use it for potatoes (peel, chop, cook, mash - done!), squash, and pretty much any and every fresh produce, with only a few exceptions (asparagus being one of them - I prefer those roasted :).

The other kitchen appliance I use every single day is my NutriBullet 900 series. I've had it for over 4 years, and it still works the same as it did on day one. I use it for my health shakes and smoothies, soups, sauces, and recipes like this one!

INGREDIENTS:

  • 1/3 head cauliflower (depending on how many servings you're wanting)
  • 1 tsp. Coconut oil
  • 1 clove garlic, mashed and sautéed
  • Sea Salt to taste
  • Pepper, Dill Weed (optiona)l, to taste
  • Other optional ingredients: roasted sweet peppers, sun dried tomatoes, sautéed onions, etc.

DIRECTIONS:

  1. Clean cauliflower, break into sections and steam in the microwave in your Micro-Cooker.
  2. Meanwhile, sauté garlic and other veggies in EVOO if using.
  3. Transfer the cauliflower to a food processor (I love my NutriBullet) along with garlic, seasonings and coconut oil. Puree until smooth and creamy. Stir in any remaining optional veggies. Enjoy!

Easy Mac-N-Cheese

So this recipe is mostly for the kids when they want an ooey-goey cheesey comfort food that only can be satisfied by the cheesiest, creamiest goodness that comes with home-made.

It takes no longer than making a box mix, but I feel so good about knowing what is in it! You can make some simple substitutions to make it (fairly) clean eating, which I love!

Ingredients:
2 c. uncooked macaroni noodles (use whole wheat for healthiest option), cooked and drained

Melt in a saucepan:
1/4 c. butter

Stir in:
1/4 flour (whole wheat also works here, but will give it a more "grainy" texture)
and cook for 1 minute until bubbly.

Add:
2 c. milk and cook over medium high heat until thickened. Stir in salt and pepper to taste along with 2 c. shredded cheddar cheese (you can experiment with other cheeses, such as muenster).

Add in the pasta, sprinkle with paprika (optional), stir and serve!

This also makes a great pot luck meal for the littles, as you can keep it on the warm setting.

Serve with broccoli for a complete, meatless meal!

Master's Hammer & Chisel Meal Plan

So this week I finish my first round of the 8 week in-home fitness program, The Master's Hammer & Chisel! I can hardly believe I am only 3 days away from the finish line. How many times do we start a program only to fizzle out and lose interest, get bored, or lose our motivation? I know I certainly have been there! And I was far from perfect with following the workout schedule or meal plan to a "T"...but regardless, I am really happy for my results and progress!!

I created my final meal plan, and wanted to share it with you in case you are looking for some new ideas and inspiration (ALSO compatible with 21 Day Fix meal plans). Follow my posts for the recipes - I'll be adding photos with my meals throughout the week!

My next online accountability support group begins on Monday, Feb. 1st, in case you are looking for a support system to help you finish with results YOU can be proud of!

OPERATION: Fall Into Fitness

Happy Sunday!  I cannot believe we're half way through October, and TOMORROW is my BIRTHDAY!  I feel so much better in my late 30's then I did in my 20's. I'm stronger, eat better, and just feel like I have things together (most of the time). But you know, even the most consistent and dedicated of people can lose their motivation at times and benefit from having an accountability partner (or several!).  That would be ME!!!!  I have been running and using my in-home workouts (Body Beast and 21 Day Fix Extreme) consistently every day other than the occasional rest day.  I can see visible changes in my arms and shoulders and just "feel" stronger overall, but like so many of us, I feel I can always improve with my nutrition.  I just don't feel as good as I know I can, when I don't get enough water, or eat too many sweets, carbs and peanut butter. I seriously think I need to stop buying the nut butter for about 21 days so I can "detox"! Haha.

When I don't drink enough water and my eating isn't on track, I just plain can't sleep, I lack energy, I am not feeling my usual determined and motivated self, and I can totally feel it in my running and workouts.   When your body is used to eating clean, and then you have a little backslide, your body fights you back in not-so-pleasant ways!!

So what did I do about it?  I decided last week to commit myself to using the 21 Day Fix Extreme, to a "T", containers and all. But with anything, progress is progress, and there is no such thing as failure when you don't give up. I had a slip up yesterday with the Apple Crisp my mom brought over, but I'm not allowing that to get me down. The only way to fail is to quit. And I'm not a quitter. Today is a new day, and I'm back in it to win it!

This is my FOCUS:

1.  Use my 21 Day Fix containers for every meal, every day, for the duration of the 3 weeks.

2.  Ensure I get in my daily recommended water intake.  1/2 my body weight in ounces, every day.

3.  I know from experience when I follow my meal plan and drink my Shakeology, I will rid my body of sugar cravings to help me achieve my goal. TRACKING helps me stick to my plan. So therefore, I will take time to track my intake every single day. I love Sparkpeople.com, so that's what I'll stick to.

4.  Although it is so hard to take a rest day, I will take one once per week on my Yoga days.

5. I will not skip a workout, and will use my 10 minute ab workout every other day to work on my core strength.

This is public accountability at its best, and what helps me keep pushing myself to be the best I can be!  I'm hoping that together we can keep each other accountable.  I truly believe that no one is perfect, but rather it's a lifelong journey that we are always working towards. By sharing my own personal struggles and successes, I hope to inspire and motivate you to keep yourself going in the right direction!

So because jeans and sweater season is here I want to give you EXTRA accountability too!  Do you dread going into your closet to see if last year's jeans still fit? There's no worse feeling than to go into your closet and have a hard time finding clothes that fit like they should. Or feeling your muffin top bulge over your jeans, or have a huge stack of clothes in your closet that doesn't fit. It's an instant BAD MOOD for sure. Or have you ever used the pregnancy trick (when you're not expecting) and used a rubber band to hold your pants together? That feeling SUCKS. No better way to put it.  Or only wearing baggy tops so that the belly bulge isn't as noticeable? I used to do that, and it made me feel terrible about myself!  But after really buckling down, and focusing on my nutrition, the pounds seemed to melt off.  I could wear nearly anything I wanted to and feel confident, and my mood was so much better, and I was just overall so much more confident! No more shying away from the cameras :)

I know it takes dedication and effort, but I would love to pay it forward and do the same for you by offering you my help and support in a 4 week focus group online.

I am kicking off the plan and prep week to my 4 week Operation Fall Into Fitness group on Monday October 19th.  This is a 4 week, closed online support and accountability group.  My goal is to teach you how to meal plan, how to make healthier, higher quality food choices, help you to manage your cravings for sweets, deal with the temptations of the approaching Halloween Holiday, how to handle eating out, traveling and everything else life throws our way!

WEEK 1:  We will not be using workouts (unless you would like to), as there is a strong focus on your goals and getting you in the right mindset for the work that lies ahead.  Together we will set realistic and achievable goals, learn about nutrition and healthy choices, give you sample meal plans, snack ideas and more.

WEEK 2: Here starts the FUN!  Applying what you learned in the first week, while adding in your in-home daily workouts (you have the choice of any Team Beachbody Fitness program.  I help you choose the one that is right for you based on your own fitness level, goals, and current needs).  The 21 Day Fix or Fix Extreme is by far my favorite, especially if you need an overhaul on your nutrition.  Plus the workouts are great, and there are modifications at each and every level for you to follow as you work your way through the program.

WEEKS 3-4:  A continuation of week 2, we continue to use our daily workouts, follow our meal plans, share our accountability each day in our private groups, and support one another to our goals by helping one another celebrate successes along the way, and strategize any challenges or obstacles.

So at this point you might be asking yourself what the requirements to join are?

REQUIREMENTS to JOIN: All you would need is to have me as your free Team Beachbody coach and complete the below application! It is 100% free of charge, and you would just create an account on my site! Then, I would walk you through the next steps to get started and get you added into my online accountability and support group.

Lastly, each person is required to replace 1 meal a day with Shakeology for the duration of the group. The reason is simple - for your health benefit, and I want to offer you the complete solution to healthy living. Shakeology is not "just" your typical protein shake.  It's not comparable to Slim Fast or any other shake on the market. I'm totally guilty of not checking the label on my shake. I used to use some cheap generic protein shake, that is until I took the time to educate myself on what I was REALLY putting in my body. Comparing that label to the list of ingredients of Shakeology was a game changer, and so eye opening. When you look at Shakeology you are seeing high quality ingredients that are not processed, there are no artificial sweeteners or flavorings and it is going to help you lose weight because it's portion controlled and it has the right carb to protein ratio that your body needs to make up a complete meal - therefore no cravings!

You can choose any meal or snack during the day to replace with Shakeology.  I always suggest you choose the meal that you struggle with the most (or skip all together). For some, that might be crazy mornings with getting the family off to school and yourself off to work. Others might use it for their lunch at work so that they aren't going out to eat and resorting to other less healthy options. Give it 30 days so you can decide for yourself how it helps you stay on track, and how it helps you FEEL!  It will also help the transition to your new healthy routines easier, it will help you get better results because your body is getting proper nutrition and can recover faster, and at the end of the 4 weeks we can re-evaluate to see where to go from here!

Coconut Dream Shakeology

What does joining a Support Group entail?  Each day you will log in to the closed online accountability group and read the daily post from me, as your coach.  You will find either a tip on clean eating, a recipe, motivation or accountability.  Each person is required to check in each day and report their day for accountability (usually in the evening, or report for the day prior).

This is a private, safe place for us, as we are all doing this together. REAL people just like you, to help get you through any obstacles that come with reaching your health and fitness goals.  Having each other's support and encouragement is so invaluable, and will help us stay on track!

To reserve a spot in my Fall into Fitness Group, please complete the application HERE!  There is a limited number of spaces and its first come first get! Hope to see you in the group, get to know you and together become fitter and healthier versions of ourselves!!!  I cannot WAIT to ROCK OUT OUR SKINNY JEANS WITH YOU AT THE END!!!

Apple Cobbler Yogurt Parfait

This was the first recipe I tried out from the new CIZE Eat it Up! nutrition guide, and it was so quick, simple, and delicious!!! I think I could honestly have this every single day. This is one of those meals that you could literally prep up in advance and stack and store in your fridge when you are ready to eat.

Ingredients:
3/4 C. Plain Greek Yogurt
1 C. Sliced Apple
10 Pecan halves (chopped)
Ground Nutmeg & Cinnamon to taste
1 tsp. Maple Syrup

Add the ingredients to a medium sized bowl in order listed, and enjoy!!!

CIZE-4-CHANGE begins now!

As you probably already heard, the brand new workout from Shaun T was just released this week. I started the workouts on Monday, and have committed myself to complete the program following the 4-week calendar schedule.

Do you dread your workouts?  Consider #CIZE4change. Change how you think about fitness and exercise. Change how, and where you work out when you take them with you anywhere On Demand. Change your emotional and physical state when you just dance your worries, stress, anxiety, and calories away!

But perhaps the most important change of all, will be the change in how you will laugh and enjoy your workouts, instead of dread them. Think about how if you could only just get started with a fun workout that you would WANT to do each day, how easy that would be to help you get into a healthy routine and habit of moving your body daily. Not to mention, when your kids and family see how much FUN you are having, they will want to join you as well!!!!

If you know me AT ALL, you would know that I DO NOT DANCE. Well, in front of people that is - haha!!  These workouts feel more like a dance lesson than a workout. I don't remember ever laughing during Insanity Max:30 or 21 Day Fix Extreme. I love how my mood is immediately better just by pushing play and dancing my stress away. I was really surprised at how I was learning the moves so quickly, and pretty much had it down after doing it just one time!  Took me back to my Football Cheerleader days and learning the cheer and dance routines :)

The meal plan is in alignment with the 21 Day Fix, which means it's SUPER easy and simple, likely all the foods you normally eat, and completely portioned controlled with using your containers and trackers.

This is the CIZE meal tracker from the Eat It Up! nutrition guidebook.

Putting meals together is so easy with the nutrition guidebook. For each meal, you literally pair your food groups together to create your delicious, balanced, portioned controlled breakfast, lunch and dinner. There is no need to flip back and forth as in the previous nutrition guides for the portion controlled plan, and the suggested meals are AMAZING!!!  This is my plan for this week, and I honestly cannot WAIT to share these recipes and meals with you as I use them.

I wanted to share today's lunch with you. It was SO GOOD!!! I I normally have greens for lunch. Today I'm changing things up with an Apple Cobbler Yogurt Parfait 😋🍴.
Cize Eat Up! plan is so simple, refreshing, balanced and perfectly portioned controlled that ANYONE can follow this without feeling hungry!! Delicious meals, simple prep, perfection.
It's so much easier to stay on track when you love the meals you're having!!

TEST group starts on the 27th!!!
Apply HERE to be considered

If you don't have a coach and you would like to join my exclusive support and accountability group to be the first to get results and potentially win $$ and prizes, then complete the application to be considered for a place in this exclusive test group.

ARE YOU READ FOR THE END OF EXERCISE?  CIZE IT UP!!!!!

Lets do this!!!

SPECIAL OFFER:  Anyone who joins the CIZE Launch Group with A challenge pack will also be entered to win a Fixate Cookbook with 101 recipes that will fit perfectly into the CIZE nutrition plan to keep your meals easy, healthy and a no brainer when it comes to planning!

Time to CIZE-4-CHANGE. Your time is NOW!

PROJECT: Kitchen Makeover

As you get started with your NEW CHALLENGE, cleaning out (or at the very least, reorganizing) your kitchen of those trigger foods and temptations is going to be KEY. You might be feeling strong and determined TODAY....but you WILL have those moments of weakness. Today I want to share with you how to change things up in your kitchen, pantry and fridge so that success is not just simple and convenient but visually enticing!

Step 1 – Pantry & Cupboards: Box The Junk
Get some boxes and/or bags. For the donate-able items (items that have not been opened and have not expired) you’ll need one box for frozen food, one for dry goods and one for refrigerated items. Then you’ll need one box for items that will need to go to the garbage.
Step 2 – Sort the Junk
Sort through your cupboards and pantry and get rid of any item that has ingredients you cannot pronounce or you don’t understand what it is. If you don't recognize it as food, you won't want to use it in your body. Here are a few examples of things to throw out: canned soups, canned pastas, Uncle Ben’s dishes, Kraft Dinners, most crackers, chips, jello, pudding packages, cold cereals, cake mixes and candy bars. This might seem extreme, but you are making way for some amazing changes to you and your family's bodies and health. You will thank yourself later! Remember, you are an athlete in training. You need to use real food to fuel your body. If that box of lucky charms for your kids is constantly calling your name, ditch it.  Stepping into your kitchen shouldn't be anxiety producing!  Make it easier on yourself to make health choices by eliminating the temptation of poor choices.
What will still be remaining is white sugar, white flour, brown sugar and dried pasta. These items will eventually need to be replaced with sprouted spelt or whole grain flours, real organic raw cane sugar (or preferably honey, agave nectar, coconut flakes and maple syrup), spelt or kamut dried pasta (don’t worry they’re not that much more than regular pasta and I think they taste better than whole wheat pasta), or use veggie substitutions (spaghetti squash, eggplant) couscous or quinoa. Either you make gradual changes and slowly replace these items, or you do it cold turkey. Either way, you want to stop buying these "foods".
If you do decide to keep some of those foods that you know you should eventually replace, put them way up high where you would need a step stool!
I use the eye and chest level shelves to place the healthiest nonperishable items.  So here is what you can find on my shelves:
  • Brown Rice Unsalted (or low sodium) rice cakes
  • Unsalted Raw Almonds, Cashews, Peanuts
  • Old Fashioned Oats
  • Protein Powder
  • Shakeology
  • Canned Low Sodium black beans
  • Canned low sodium diced tomatos
  • Instant Brown Rice
  • Dried Fruit such as craisins, raisins, cherries
  • High quality protein bars (such as Quest or P90X bars)

Then, put things where family members know where to find them.  I basically stock the same stuff all the time.  I maintain a list and check off what i need.  But there is no mystery.  No one is opening the pantry and expecting a sudden influx of cookies or chips.  Boring?  YES!!!!  Intentionally!!!  You see, if you never knew what you might get when you opened the pantry, you'd go there first!!!  I don't want my family to eat from the pantry.  The pantry is where emergency foods live.  Let's face it, with few exceptions, just about everything in your pantry is processed!  The healthy stuff is in the fridge!!!

Step 3 – Refrigerator: Cold Junk Goes, Real Food Stays
The biggest offenders here will be condiments. BBQ sauce, fake pancake syrup, salad dressings, low fat or fat free, flavored yogurts, lunch meat and stir fry sauces. Some things you’ll want to hold onto are mustard & mayo (it’s so much better homemade but this might be another one of those transition products), butter, pickles, capers and hot sauce. Read the labels so that you know what is in the foods you use. That way when you go to the store to replace the empties, you will know what you need to look for as an alternative brand or product. Over time you’ll get really good at reading labels and some of the products you see now will also disappear, being replaced with better choices later. Better choices, as you restock, are full fat plain Greek yogurt, eggs, block cheese, fresh produce and milk, to name a few.  Notice I mentioned nothing about soda, juices, energy drinks, alcohol...those foods will be reserved for once in awhile splurges. Don't worry - you'll survive!

Step 4 – Freezer: The Frozen Junk
I never realized how many people rely on frozen dinners. Growing up on a dairy farm, growing our foods in the gardens, our freezer has always been a place to preserve our summer harvest. But unfortunately, that isn't the case in most households. Normally, foods that people really don’t want to get rid of are kept here. The frozen pizzas, microwave dinners, frozen egg rolls or burritos, ice cream, pizza pockets and Freezie Pops.... what should remain are frozen vegetables, frozen berries and meat. This will be a haven for all the yummy food you’ll make in the future. Remember, you can always freeze a portion of your delicious clean eating prepped meals, for quick, easy real-food dinners.

Step 5 – Say Goodbye
Take all your boxes of unopened food loot out of the house and off the property immediately and don’t look back.  Your local food pantry will appreciate your donation!

Have the right tools in the right places!
Each tool that you use on a daily basis should be kept close to the area where you prep your food.  I suggest having the following all in one drawer, plastic container, or cupboard for quick and easy access:

  • Paring knife
  • Vegetable peeler
  • Measuring cup
  • 21 Day Fix containers for portioning
  • Snack size plastic bags
  • Plastic 1 cup size reusable containers
Use your containers or bags to portion snack foods  You and I both know we are going to keep reaching into that bag of snacks or treats and eat well beyond an individual portion, ESPECIALLY those roasted almonds or trail mix.  Here's what I do:  Repackage snacks into servings sized baggies and store in the FREEZER. Out of sight, out of mind..but they're there for you when you need a fast snack or on-the-go food for the family.  This makes it simple for grab and go snacking!

WHERE do you place your foods? Does it make a difference?
When we stand in front of the fridge, we tend to grab whatever food takes the least amount of time to prepare and that "looks good."  The healthy stuff, like fresh produce, we hide in the drawer that's difficult to get to, and even easier to forget about until you notice a bad smell coming from your fridge!  So when you get home from your weekly grocery shopping, I suggest that you clean and display your fruit in clear plastic containers or bowls, and place your fresh produce on the MIDDLE SHELF so it's at eye level, prepped and ready to grab and eat.  There are even pre-cut veggie options if you don't have time! No excuses, right?

Arrange your greek yogurt near the berries and veggies.  Store cottage cheese nearby as well.  Place healthy whole foods at eye level near the front of the shelf.

When you are building muscle, hard-cooked egg whites are a great source of lean protein, and they're easy to prep so they're ready to go!  Boil a dozen eggs on Sunday night, then peel and place them in a large storage bag.  Now, all you have to do is remove the yolk, dice up your egg whites, dump some salsa in there and BAM!  Or you can just eat your egg whites on the go whole!

Other fast protein sources to be stored at eye level in your pantry include prepackaged tuna, salmon or chicken packets.  Though they store well in the pantry, if you prefer them cold with your wrap or pita pocket keep them in visible sight in your fridge.

Now when you find yourself staring mindlessly into your fridge, you'll see the stuff you should be eating!  It's washed, cut, enticing and ready to go!!

Replacing your old staples with new alternatives:

Look in your refrigerator for regular staples and read the ingredients label.  Then ask yourself if you're willing to try a healthier alternative.  One thing that really helped me, is when I started to change the way I was eating, I was still feeding my kids the same old. And then one day, I thought to myself, if I wasn't willing to put these foods in MY body, why would I feed it to my family?? Like PB&J every week, for example, or Grilled Cheese with processed American cheese?  Would they notice if you subbed fresh fruit (bananas) in place of sugar laden jams and jelly?  My kids prefer fresh fruit wraps to jelly any day. If you don't say anything, they might actually love the changes!  I love cheese but instead of buying a brick of it you can stock up on individually packaged string cheese!  They are portion controlled and appropriately sized.  I don't have the time to look at the packaging to figure out how many ounces is a single serving. And switching out the processed cheese to real cheese slices was super easy, and a welcomed change for our family.

Let's talk condiments... Ketchup now comes in all natural with no high fructose corn syrup, dijon mustard you can buy with no added sugar.  I substitute Greek yogurt for recipes calling for sour cream, and nobody notices.

If you are not sure which brand or version is a better choice, there are great tools you can use to help you get started. My favorite is the Fooducate app which allows you to scan the bar codes of products for a food "rating". Each item is given a grade based on its nutritional content, which makes it convenient for quick decisions.  My kids really enjoyed helping me go through our pantry, scanning the barcodes, and helping me sort our foods. Involving THEM helped them to understand the "WHY" behind all the changes and helped get them on board.

Things to do right now to get started!!!

  1. Remove high fat, high sugar temptations from the kitchen.
  2. Survey the refrigerator for frequently consumed foods that can be swapped out by lower fat and reduced calorie alternatives.
  3. Stock up on small plastic food bags, snack containers, and clear plastic fruit bowls for display.
  4. Arrange prep tools in an easy to reach place.  The fewer steps, the better!
  5. Spring clean your fridge, make room for the fresh stuff.
  6. Divide snacks into individual servings and arrange in the front and center of the pantry!

What If I Get Off Track?
The hardest part will probably be ridding your cupboards of white sugar and white flour. Did you realize that you can substitute whole wheat flour for most all recipes with little to no effect? AND the REAL sweeteners (honey and pure maple syrup) taste WAY better?  Once you get accustomed to these changes, it will become your new norm. You will find yourself looking for recipes for your salad dressings using Greek yogurt and other ingredients you have on hand (without resorting to the boughten ones). You will get more confident and comfortable trying new recipes you and your family will love!
You can always join an online accountability group for help and support as you make these new changes to your family's eating.
